My weekend in pictures

This post may seem a little jumbled, as I’m not all here mentally today….enjoy the pictures and excuse the terrible grammar!

As some of you may already have read, Saturday was our three year anniversary – and boy did we live it up!!  Here’s how the day unfolded:

We woke up around 10:30ish and after nagging Will to get out of bed for half an hour, I finally just let the dogs attack him with wet, cold noses and tongues.  He loved that, let me tell you!

While he walked to dogs, I gathered up and sorted laundry into FOUR baskets – I’m not joking.  Two people + one week (apparently) = 4 loads of laundry. Go figure.  After making an awesome breakfast of cheese grits and scrambled eggs, Will reminded me that it was our anniversary, and immediately I felt guilty for forgetting!! That can’t be normal – isn’t it usually the other way around?!?!?!  Anyhow, we didn’t have the money this year to buy each other anything, so at least I didn’t have ‘gift guilt’ too.  The rest of our Saturday was spent taking the dogs on a long walk, cleaning the town home, and buying groceries.  Since we couldn’t afford to go out to eat, I asked Will, if we could, what would he want and he reminded me about a yummy artichoke pasta dish he used to get at Johnny Carino’s and I recreated it as close as possible: (without the capers)

It was delicious!!  The recipe is:

one (1) box of which ever pasta you have in your pantry (we had rotelle, but I think it would have looked better with bow tie.) cooked to taste

one (1) package of chicken breasts, sauteed in evoo w/ s&p and cut into strips

**You can substitute Chicken for Shrimp, Skirt Steak, or even Tofu and extra veggies for anyone who is a vegetarian.**

any veggie you like – we used 1 red onion diced, 6oz black olives cut into halves, 8oz marinated artichokes, and 3 large roma tomates seeded and diced and 3tbsp minced parsley.

Mix all veggies and set aside, although I do recommend sweating your onion in a little bit of olive oil first, but it isn’t a necessity.

The ‘dressing’ is 3Tbsp evoo + the juice of one (1) lemon + salt and pepper to taste.

Combine your cooked pasta and toss in the dressing to coat.  Once it’s well coated, add in your veggies and mix well.  Next, mix in your chicken strips (or Tofu) and place into a large pot and heat everything together, stirring continuously for about 2 minutes.  Remove from heat, place freshly shredded Parmesan cheese and parsley on top and Enjoy!!

We paired this with a Cesar salad and some fresh baked bread that we brushed with evoo and topped with more Parmesan cheese!!

Here are some pictures from our long walk with the dogs Saturday evening.  We stayed out late and it got too dark to keep taking pictures.  I practiced on the Exposaroonie theme (lines), even though I had already submitted a picture.

 

 

In case you missed it in the first photo up there, we put Guinness in a little doggie backpack and made him carry the water bottles that we used for them.  We hoped the extra weight would help him wear down faster.  I’m not really sure if it worked, maybe we’ll try something heavier next time.

After our walk, we went home and made dinner and on-demanded “You Don’t Mess With The Zohan“, which was funnier than I had anticipated, but not Adam Sandler’s best.

Ever wonder what I do during the day while I’m at “work”?? Well, let me show you!

I surf the internet and view pages upon pages of things that I cannot afford, but would LOVE to own.  I dream of the day when Will and I will own our own home and the things we will fill it with.  So far, I’ve bookmarked these things as a great place to start:

Mundane Monday #2

See, I can keep my promises. 

Will and I had a pretty low-key weekend.  We didn’t do too much, just kind of hung around and watched TiVo, went grocery shopping, etc.  We did splurge a little and saw Max Payne, and let me be the first to tell you to keep your money.  It really wasn’t that great.  In fact, it was kind of boring.  I have been really slipping with my blogging and photography this past week, but I haven’t bought my medication yet (bad me, I know) and I’ve been extra tired and unmotivated.  It’s also not helping that the weather here has been BLAH.  Cloudy most days, although nice and breezy and a little cool, but still just BLAH.  I miss the weather in GA where we had defined seasons and it actually got cold.  I didn’t realize how much I liked cold weather until all I had was warm.  Weird, huh?  I guess it’s a ‘grass is greener’ kind of thing.

Breakfast, Brunch, or Brinner

Breakfast food.  I cannot even begin to tell you how much I love any and all breakfast foods.  I could LIVE off of breakfast items for every meal of the day and be perfectly happy.  Obviously, I’m not the only one because now you can  have breakfast for every meal of the day.  Breakfast, Brunch and Brinner.  I swear I didn’t make that term up:

Case in point – the brunch I made on Sunday that I am seriously considering having again for dinner tonight:

 Home-made french toast on Challah bread with low fat bacon and scrambled eggs with cheese.  It was so delicious that I don’t even mind that syrup ran into my eggs. 

Salivating yet??  If you are interested in making the people in your home happy, then you, too can make brinner.  Want my french toast recipe?? It’s incredibly simple:

8-10 slices fresh challah bread, 3 large eggs, 1/2 cup of milk, grate 1tsp cinnamon stick, one whole vanilla bean (not extract).  Mix all ingredients and then coat your bread, cook on med-high until golden brown.  Choice of toppings is only as limited as your imagination.  We went simple on Sunday, but I love making it with bananas and sliced almonds.  If you have a twist or a creative topping idea, let me know!! Blatent Product Placement

Since the holiday weekend flew by and I wake up today to find that it is already Wednesday, I had a small panic attack when I realized how long it had been since I had posted or checked in on anyone in the blogosphere.  Now that I have gone trough and read everyone’s post andI feel fully informed, let me tell you about our weekend. Er, MY weekend. 

Friday night we met up with April andJames at a local bar/club.  April’s best friend Chantelle was in town from London and they decided to invite us along (more James, I’m sure .  He didn’t want to be the only guy there.)  Naturally, we oblige and when we get there, Kelly is there and she is another friend of April’s who I’ve never met, but Will has and they don’t really get along too well.  Plenty of alcohol is involved on everyone’s part (except mine) and as the night progresses, I realize how much I hate bars/clubs.  People get too drunk and make HUGE fools of themselves.  I know this next part may sound a little bit harsh and judgemental on my part – but oh well.  At one point we were inside at the bar right in front of the DJ booth when in walks a Desperate Cougar with her obviously recent 21 year old daughter.  D.C. and daughter proceed to drink too much and LITERALLY grind on one another for everyone’s “enjoyment”.  It was very, very sad.  I feel guilty about feeling so disgusted by this scene because I’m sure that D.C. has recently gone through a hard divorce, (where she obvs got a decent settlement b/c she was PLASTIC from head to toe. So much so that her face looked creepy and un-natural), has very low self-esteem and just wants to feel attractive again, and she prob. feels comfortable out with her daughter.  To me, these all seem plausible explanations as to why she could be there, but she REEKED of desperation, like she was just emulating the “fun” she sees on a cheesey Girls Gone Wild video tape – WITH HER DAUGHTER.  Now, I know that plenty of people meet in a bar, but how often, really is it a quality relationship?? Aren’t those the usual one night stands?? If you really want to “date” someone, personally, I feel like you should go places that people your age tendto be.  The only person even close to D.C.’s age was a random drunk guy who kept staring at all the young girls in an inappropriate, molesting kind of way. SO – to wrap this rant – James, Kelley, and Chantelle all got waaayyy to drunk, James puked and we all went home.  The best part of the night was April, Will and I sitting there making fun of the drunk people we were with and watching as the look of comprehension crossed their faces. 

Saturday and Sunday Will had to work at SB, so I decided to start reading the series that Will’s boss lent me.  She found out that I LOVE Buffy the Vampire Slayer, so she sent The Twilight series home with Will for me to read because she thought I would like them and she was wrong – I LOVE THEM!!  You can check out the official website here.  I am a quick reader and I read the entire first book Saturday, the entire second book Sunday, and MOST of the third book Monday.  Because I had to go back to work, I just finished the third one tonight, but I highly recommend this series.

Monday, when I wasn’t reading and boring Will to death, we went to the local Zoo here to take some photos with Shawn a friend Will made at SB who also happens to be into photography as well.  You can check out his blog or his flickr if you are interested in see any of his shots from that day.  I’m going to edit mine soon, so hopefully they will be up before next week!  After the zoo, Will and I went grocery shopping, and I discovered some little jewels I’d like to share with any of you lovely ladies for your PMS time:

 

 

For those days when you really want something salty, but you don’t want to over-do it, I highly recommend this popcorn.  It comes in Mini-bags to help prevent over snacking, but I’m sure once you taste it, you’ll want to consume the whole box at once.  The Simply Salted it really good too.

And for that chocolate fix:

Weekend Wrap-up

This past weekend was such a relaxing weekend for Will and I.  He had Friday night off, so we had the first “date night” we’ve had in a really long time.  We went out for sushi and split three different rolls along with some edamameand soup.  It was really delicious and long overdue.  Then, we went and saw Pineapple Express which was very funny.  Kinda gross and violent at times, but funny none-the-less.  I recommend it.  Not so much as a romantic date movie, but more of a ‘bromance’ movie with the guys/girls.  Anyhow, Saturday marks the first day in OVER A FREAKIN’ MONTH that we’ve gotten to sleep in until we couldn’t sleep no more.  We made it until about 11 a.m. and then I’d had enough.  Will had to work SB that night, so we just kinda hung around and relaxed.  We made breakfast and watched some stuff that was on the DVR (Psych, Monk) and then he went to work (BOO!).  When he came home from work, he brought me a couple of surprises – first being a berry stella (a pastry thing w/ oats and dried fruit shaped like a star. Very yummy)  the second being that he got his shift covered for Sunday and we had AN. ENTIRE. DAY. OFF. TOGETHER!!  I was beyond excited.  That meant TWO days in a freakin’ row to sleep in and an entire day of Will and I together.  Of course, we slept in again, until about 10:30, then we went to Einstein’s Bros. Bagels  for breakfast and then went grocery shopping (yawn! I know, but it’s gotta be done) where we bought vacuum bags (my carpet was turning black from the thick coat of Guinness hair that had over run it) and stuff to make home made pizza later this week (YUM!!)  Then we came home and cleaned house (and by that I mean Will vacuumed and I put away groceries and Windexed all the glass tables.)  Somehow we got it into our brains that taking the dogs to the beach would be a really good idea, so we packed up a gallon of water that we keep in the fridge just for this occasion, dog toys, towels, changed into our swimsuits, ran the dogs around outside first to wear them out a little so they aren’t so nuts by the time we get to the beach, and made the 5 minute drive over there.  Of course, we were INSANE when we made this decision because Mia started growling at the first dog who came over to greet them (another female, of course) and when we decided that Guinness was being good and should be let off the leash, he ran off after another dog (ugh!) and so then we put them back on their leashes and walked them down the shore line a little while.  I have to say, the ocean after a tropical storm/hurricane is pretty gross.  The water was so brown it actually looked like lake water and most of the shore had been washed away because of the large waves crashing the sand, so there were HUGE ‘hills’ in the sand to get down to the water.  Anywho, we had a really hard time keeping the dogs in check and with the gross water, we didn’t really want to stay too long, so after about an hour or so, we packed up and headed home.

After bathing the dogs and showering ourselves, we ordered a greek pizza for dinner (Yum-O!) and settled in to watch tv where we napped on the couch for about an hour.  When we woke up, we boiled some edamame and watched the Roast of Bob Saget that we had recorded and then flipped over to see that Gene Simmons was also getting roasted on A&E.  Both were very funny, but Gene Simmons had Lisa Lampanelli at his roast, and she is Hil-ar-ious!!  Don’t believe me?? Go check her out on YouTube.  She is kinda vulgar, so if you’re not into that kind of stuff, I would recommend that you stay put.  Anyhow, that is my weekend wrap-up.  I actually started this post on Monday, got busy and forgot it, so I’m finishing it today and voila!

This week is going to be a little hectic for me because Will and I are getting ready to go back home for my Brothers wedding on Friday, so the postings will be slim to none.  I am still going to try to participate in this weeks Exposaroonie Challenge, but I may have to skip it.  I doubt I will be able to do a Furday Friday post this week because I will be super busy getting ready for the wedding and being at the wedding, so I will try to get something up Saturday if I have time (maybe some guest doggies??).  If not, I’ll see all of you good folks on Monday and I hope your week is super!!  I’m positive that I will have PLENTY of pictures for you next week!!

Oh, and before I forget, I watched Grace is Gone, a John Cusak  film about a dad who takes his kids on a road trip after finding out that their mom (a solider) has died in action and he can’t find a way to tell them, and I have to say I cried through almost the whole film.  (I’m such a girl, I know) It was a really great movie and it really showcases what a great range that John Cusak has. It looked like he put on a little weight for this film and for once, his sister Joan wasn’t in it.  John Cusak is probably one of my favorite actors, he’s definitely one of Will’s.  Anyhow, check it out if you have some downtime!!  If you watch it, let me know what you thought!
